Summer Memories in a Jar

Food is one of the best ways to make memories. Whether it’s with your loved ones or friends, almost every memory has food attached to it. This week I talk to my listeners about all the amazing memories people have with food.

My Summer in a Jar

This is one of my favorite summer time recipes. It can be served with just about anything and is a perfect gift. Here are the ingredients and instructions for giardiniera or as I like to call it, “My Summer in a Jar.”

Ingredients:

  • 4 pounds of mixed, in season vegetables (carrots, celery, green beans, cauliflower, red and yellow peppers, onions)
  • 2 cups of white vinegar or apple cider vinegar
  • 5 tablespoons of extra virgin olive oil
  • 3 tablespoons of sugar

Instructions:

  1. Cut the celery and peppers into large chunks. Cut the carrots into sticks and the green beans into large pieces. Use the curd of the cauliflower that was detached from the hard stock. Peel the onions and leave whole.
  2. Wash the vegetables and pat dry.
  3. Place vinegar and oil into a large pot with sugar and a pinch of salt. Bring to a boil and place all the vegetables in the pot.
  4. Let the vegetables boil for 2 minutes, mixing consistently.
  5. Remove from heat and place into sterile jars for preserving. Leave about a half an inch at the top, seal the jars.
  6. Boil water in a large pot, submerge the sealed jars into the boiling water and let boil for at least 5 minutes, remove and let cool. Dry and label the jars with the date and leave them unopened for at least 3 weeks.

Giardiniera can be stored up to 6 months in a cool dry place or up to one week in the refrigerator once opened.
