National Pistachio Day was February 26th, which means that there is still plenty of time throughout the weekend to celebrate! This year, make something unique for your friends or family with these five easy nut-inclusive recipes. We chose both savory and sweet creations, so anyone who loves the main ingredient (pistachios, of course!) will be able to enjoy at least one of the following delicious snacks:
- Pistachio Biscotti
This pistachio biscotti recipe from Food Network by Tyler Florence has an almost five star rating with over seventy reviews. Biscottis are quite versatile, as they taste amazing with drinks like tea or coffee and pair great with toppings like jam; I would even recommend a chocolate sauce to drizzle over these if you want to serve them as a dessert.
The recipe listed only has eight ingredients and can be prepared within an hour and a half. Pistachio biscottis seem like a perfect finger food to impress any guest without the hassle of preparing an intense meal.
- Pistachio Cranberry Bark
If you love cranberries, you absolutely need to try the pistachio cranberry bark from Taste of Home, courtesy of Susan Wacek. The saltiness of the pistachios combined with fruit and chocolate makes for a perfect balance of flavors, and they can be served alone or with another dessert such as a vanilla ice cream.
This pistachio cranberry bark takes less than a half an hour to prepare and is a rather fun recipe, as it includes breaking and smashing the hardened chocolate.
- Broccoli Spoon Salad (With Pistachios & Warm Vinaigrette)
If you’ve never made a spoon salad, this is the perfect opportunity to try one out! It may sound intimidating, but the term only means that all of the ingredients are finely chopped to the point where one can eat everything with a spoon. They can be fantastic appetizers, and this broccoli spoon salad by Beverly Kim on Bon Appétit is no exception. It’s salty, savory, and spicy- and easily adjustable so that the levels of each flavor can be balanced in whatever way works best for you.
The pistachios toasted over a skillet have to be the highlight of this salad, as the complex nutty flavor really ties everything together. If you have all the ingredients available, this salad only takes about twenty-five minutes to put together.
- Italian Pistachio Cookies
These italian pistachio cookies provided by This Delicious House have five stars and over eight hundred shares. The author, Angela Allison, describes them as soft and mild. This authentic dessert only uses very basic household ingredients and pistachios, so chances are that you have everything available already!
The recipe requires a food processor, but there are other ways to ground pistachios- if you do not have the proper equipment, we recommend a ziploc bag and a rolling pin to crush the nuts into bits.
- Homemade Pistachio Butter
This recipe is a bit more obscure than the others, as pistachio butter is not as common to see as other nut butters, but I encourage you to try it nonetheless. This homemade pistachio butter by Lindsay Landis on Love & Olive Oil is creamy, savory and amazing with carbs like bread and rice. The best part? You only need three ingredients: pistachios, oil and sea salt.
Pistachio butter is also an amazing addition to a charcuterie board or a flavorful add-in to a fruit smoothie. Since it’s so incredibly easy to make, you save both time and money if you opt to make it yourself instead of buying it at a grocery store.
